
By changing our breakfast routine, we could change the entire tone of our day. But, often people are at a loss because these habits are so ingrained. So, I shall try to help you, one recipe at a time.
This "Buddha Bowl" is delicious any time of day. You could have it for dinner, or serve it up at breakfast like we did this morning. And, it's super healthy. Full of fibre, antioxidants, protein, healthy fats, liver-loving veggies like the cabbage and kale... and all the while it is meat free, dairy free, gluten free, and easily grain free.
1. First steps: marinate your tofu. The longer it sits, the more delicious it becomes. It can stay in your fridge for up to 3-4 days, so one batch could last you most of the week! Prep on Sunday, enjoy the rest of the week. This recipe is from the Oh She Glows: Everyday cookbook
Marinated Italian Tofu
Ingredients:
- 1 block firm tofu, cut in to cubes
- 1/3 cup olive oil
- 1/3 cup balsamic vinegar
- 2 tbsp tamari
- 4 cloves garlic, diced
- 1 tsp pure maple syrup
- 1 tsp lemon juice
- 1/2 tsp dried basil
- 1/2 tsp oregano
- 1/4 tsp thyme
- 1/4 tsp sea salt
- 1/8 tsp black pepper
Directions:
- Mix all ingredients together in a bowl or large ziploc bag. Marinate for at least 30 minutes or up to 3/4 days.
- You can eat this tofu without cooking it, or you can pop it in a frying pan and heat it up. Either works!
2. Second Steps: prep your veggies. You can do this ahead of time and grab a handful throughout the week to save time.
Ingredients:
- Thinly sliced kale
- Thinly sliced purple cabbage
- A few handfuls of cherry tomatoes
- Cooked quinoa (omit if you want this dish to be grain free)
- 1 clove garlic, diced
Directions:
- Using the same pan as the tofu, without cleaning it, heat garlic for 30 seconds
- Add the rest of the veggies and stir fry for 5 minutes, stirring a couple of times (I added a bit more balsamic and olive oil)
3. Final Steps: Layer veggies/quinoa with tofu and top with some hummus (store bought or make your own using the Classic Hummus recipe from Oh She Glows: ohsheglows.com/2010/12/04/the-hummus-that-changed-everything/
Like I said above, you can prep this all at the beginning of the week and leave it in your fridge to quickly warm up in the morning. Easy, delicious and good for your body and mind.
